Cantine Edomè
We called our winery Cantine Edomè using our splendid Sicilian dialect.
The name “e do mè” means “it is mine”, hence “Cantine Edomé”, the cellar of my wine, the wine produced by our family.
Ninì Cianci together with his daughter Paola and the whole family contributes to the birth of these wines produced with care and love in an artisanal way.
What comes out is easy to understand: wines rich in aromas, harmonious and persistent aromas.
Our vineyard is located on an ancient extinct crater lying on the slopes of the great volcano Etna.
This slice of Sicily is in itself a unique territory, not reproducible in any other place on the island, which gives typicality to every product of its land.
Our native vines of Nerello Mascalese and Nerello Cappuccio (for the red wine) and Carricante grapes (for the white wine) from the area of S. Maria di Licodia at an altitude of 900 s.l.m. are grown as saplings and supported with the traditional chestnut pole.
The ancient part of the vineyard consists in vines that have an average age of 80 years. The vineyard, located in the town of Castiglione di Sicilia in Passopisciaro, contrada Feudo Di Mezzo, is 700 m. s.l.m.
The result of this production is called “Aitna” and it is a wine that we could define artisanal, rich in essences, aromas and unique and particular mineral notes inherent in the sandy-volcanic soil from which it is generated.
