I Custodi delle Vigne dell’Etna
I Custodi delle Vigne dell’Etna is one of the most interesting realities in the landscape of Sicilian natural wine. It is located in Castiglione di Sicilia, a municipality with a high wine-growing vocation located on the northern slope of Etna.
The various vineyards managed by I Custodi are located at an altitude ranging from 600 to 750 meters above sea level, and the vines, pruned with the traditional sapling system, have their roots in sandy soil of volcanic origin, particularly rich in minerals. The agronomic management is based on the utmost respect for the environment, and the use of chemical products is strictly prohibited. Even in the cellar, the processes are little invasive: the fermentations are triggered only by indigenous yeasts, and during the various stages of winemaking, no oenological adjuvants are used, except for limited quantities of sulfur dioxide. When tasted, the wines produced by I Custodi are alive, energetic, profound: in a word, Etna.
